MAMAK FRIED MEE


Here's a simple and delicious noodle meal that is easy to prepare. It's a little spicy so best to have it with a glass of ice-cold drink on a lazy Sunday afternoon....

Ingredients (for 2-3 persons):
250g yellow noodles
garlic, finely chopped
1 large onion, sliced thinly
1 large potato (boiled and diced) (optional)
1 1/2 tbsp chili paste (or to taste)
2 pcs firm fried tofu (cut into cubes)
2 bowls bean sprouts (taugeh)
3 tbsp ketchup (MAGGI tomato sauce)
1 tbsp light soya sauce (or to taste)
2 limes (limau kasturi)
Oil for frying

Method:
(1) Place noodles in boiling water and scald for 1-2 minutes. Remove and wash with tap water to get rid of the alkaline taste.
Drain dry and keep aside.
(2) Fry garlic for 1 minute before adding onion slices and fry for another 1-2 minutes. Add in chili
paste and fry until fragrant.
(3) Add potatoes (if using), tofu cubes and then the noodles and add a little water if too dry.
Add in the taugeh and continue to fry for about 2-3 minutes before adding in ketchup and soy sauce. Stir in well and turn off heat. Dish up.
(4) If you prefer, squeeze a little lime juice over noodles before serving.
